Our History

My story started when I was 22 years old, studying chemical engineering. Most people in my program were focused on internships but I couldn’t stop thinking about food, flavor, and creating something new from nothing. I wanted to build things. I wanted to bring ideas to life.
So while I was still in college, I opened my very first restaurant in Latin America. I didn’t have much money, but I had a vision: bring new concepts to my town; fresh, exciting, and made with passion. I wanted to create a place where people didn’t just eat… they felt happiness, connection, and transformation. A place where something simple, like a burger or chicken fingers, could make their day better.
That first restaurant taught me that building from scratch is in my DNA. It taught me that I love bringing joy to people through food. It taught me that I wasn’t just studying chemical engineering… I was engineering experiences.
Overcut Pizza is the next chapter of that journey, rooted in creativity, craftsmanship, and the belief that food can transform a community. After graduating college, I didn’t just decide to make pizza… I wanted to make the best pizza possible. That mission took me to a professional pizza course where I learned from Italian masters how to craft authentic Italian pizzas healthier, fresher, and richer in flavor. Overcut Pizza brings that authentic Italian foundation and combines it with bold American style, creating a unique flavor experience you won’t find anywhere else.
